Vegetable soup

After the Christmas holidays, we always feel a little full, and often have a few extra pounds to shed, at least to get back in shape before Epiphany!

What’s better than a vegetable minestrone, rich in vitamins and fiber, which help eliminate excess toxins, especially when served with crunchy slices of multi-grain bread! We also recommend adding a few spices to flavor the vegetables, such as turmeric, which has many beneficial properties for the body and a unique, delicious flavor.

Ingredients:
Onion
Potatoes
Carrots
Leek
Turmeric powder
Sweet paprika powder
Salt and pepper to taste

Of course, you can substitute the spices as desired, based on your personal taste.
Clean and dice the vegetables, place them in a large pot with water and spices, and cook for about an hour, or at least until well-cooked.

Add salt and pepper to taste, being careful not to overdo it and cover the vegetables.
Now all that’s left to do is arrange crispy slices of Mascolo spelt, turmeric, or buckwheat bread on the serving dish, rich in flavor and excellent nutritional properties.

Sprinkle with Parmesan cheese and pepper, and serve piping hot!
