Ingredients:

  • 120 g butter
  • 150 g almond flour
  • 2 eggs
  • 120 g sugar

To prepare the divine almond cream, start by taking the room-temperature butter and the sugar and whipping them until creamy with an electric mixer. Once the mixture is well-mixed, add the two eggs, one at a time, continuing to beat with the electric mixer. Finally, add the almond flour, stirring well with a wooden spoon to combine it with the butter, sugar, and egg mixture. Then, bring the mixture to the heat and cook the cream until it thickens. When the cream begins to boil, you can turn off the heat and fill your cream puffs.
The secret is to wait until the cream reaches a consistency very similar to custard, although slightly thicker.

We recommend adding the cream while still warm to the sugar cream puffs. Then, refrigerate until ready to serve.
