Spaghetti with creamed zucchini and crumbled taralli
Spaghetti with creamed zucchini and crumbled taralli is a very easy first course to prepare, but with a few little tricks, it’s also a great dish.
The creaminess of the zucchini pairs with the crunchiness of the crumbled taralli, for a delicate yet tasty recipe. Here are the ingredients needed for 4 people:
- 320 g spaghetti
- 5 medium zucchini
- 4 taralli
- extra virgin olive oil
- shallot
- chili pepper (optional)
Preparation
Wash and dice the zucchini and sauté them for a few minutes in a pan with a drizzle of oil and a little shallot. Continue cooking, adding salt and a little water until the zucchini are soft.
At this point, transfer everything to a container and blend until you obtain a thick cream. Add a pinch of chili pepper if you like, and meanwhile, cook the pasta in plenty of salted water.
Drain it before it’s cooked, still slightly al dente, and reserve a little of the cooking water, which you may need to stir the pasta into the zucchini cream.
Add the spaghetti to the sauce and, if necessary, add a little of the cooking water to combine. At this point, crumble the taralli with almonds and add some, stirring, and sprinkle the rest on top. Serve hot and get creative with a unique plating! Enjoy your meal 🙂
